Mexican Night at Kathy's

Tonight is Mexican Night at Kathy's house.

You may think of Mexican food as tacos and burritos because that's what we have at fast food chains. Mexican cuisine is so much more. So tonight Taste Tempters will be trying out some Mexican style recipes.

Happy St. Patrick's Day

Happy St. Patrick's day everyone!!

Think Green! This month Marueen will be hosting our Taste Tempters gathering. In honor of St. Pat's day our theme will be make anything with a green ingredient.

In search of St. Patty recipes, today I found these adorable Cake Balls on Allrecipes.com.

Ingredients:

1 (18.25 ounce) package chocolate cake mix
1 (16 ounce) container prepared chocolate frosting
1 (3 ounce) bar chocolate flavored confectioners coating

Directions:

Prepare the cake mix according to package directions using any of the recommended pan sizes. When cake is done, crumble while warm into a large bowl, and stir in the frosting until well blended.
Melt chocolate coating in a glass bowl in the microwave, or in a metal bowl over a pan of simmering water, stirring occasionally until smooth.
Use a melon baller or small scoop to form balls of the chocolate cake mixture. Dip the balls in chocolate using a toothpick or fork to hold them. Place on waxed paper to set.

Breakfast at Patty's House

Thank you Patty for hosting a lovely evening tonight at your warm and inviting home! What a great way to eat yummy breakfast food and drink mimosa and bloody mary cocktails. It was nice getting together and catching up with everyone.

Sausage and Cheese Strata

Ingredients:


12 eggs, beaten lightly
3 1/2 cups milk
Pinch of nutmeg
Salt and Pepper
2 tsp. of mustard (I added this on my own)
1 roll of pork sausage (I used hot) I used a store brand "Hot" sausage and I think it was a bit too hot. Try Jimmy Dean "regular" sausage. You could substitute diced ham or chopped bacon. Veggies would also go well with this dish.
1 cups grated cheddar cheese (I use 1 cup sharp cheddar & 1 cup jalapeño jack cheese)
1 loaf bread

Directions:

Start by letting the bread sit out for awhile, so that it gets hard – at least a half an hour. Beat eggs, add the milk, beat lightly until mixed. Add about 3/4 cup of the cheese to the eggs, mix. Cook sausage, break it up as it cooks, drain. Cut or rip bread into cubes, layer in pan (9X13) to cover bottom well. Sprinkle with sausage pieces and some of the cheese. Layer more bread, until pan is pretty full, more sausage and cheese. Then pour egg mixture over, spreading it out so it just covers the bread. Add a little more cheese to the top. Cover tightly with aluminum foil, put in fridge overnight. To bake: Preheat over to 350. Cook uncovered for at least 50 minutes or until egg is cooked and it is puffed up and brown. Let sit for 10 minutes before cutting. ENJOY!

Orange Breakfast Rolls

Ingredients:

3 tablespoons active dry yeast (I used rapid rise yeast)
2/3 cup warm water (110 degrees F/45 degrees C)
1 cup butter, diced
1/2 cup white sugar
2 teaspoons salt
2 cups scalded milk
2 egg, lightly beaten
6-7 cups all-purpose flour
14 tablespoons butter, softened
1 cup white sugar
3 tablespoons grated orange zest

Yield: Approximately 35-40 rolls

Directions:

  • In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes. Combine the diced butter, 1/2 cup sugar, and salt in a large bowl. Stir in the hot milk, and mix to dissolve the butter. Let stand until lukewarm.
  • Mix the yeast, eggs, and flour into the milk mixture to form a sticky dough. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth, and let rise for 2 to 3 hours (it should double in size).
  • Divide the dough into halves. Roll each half out on a lightly floured surface to 1/4 inch thick rectangle.
  • Mix the softened butter, one cup sugar, and orange peel in a bowl. Spread over the dough. Roll up the dough along the long edge. Cut the rolls into one inch slices.Place in greased two 13x9 baking dish. Let rise until doubled in bulk (about 2-3 hours)
  • Bake in a preheated 400 degree F (205 degree C) oven for 10 to 15 minutes, or until golden brown.

Dad's Quiche

Ingredients:


1 lb. fresh or frozen spinach - cooked and drained well
1/2 cup chopped onions
1 clove garlic - minced
2 tbl. butter
1 1/2 cup (6 oz) shredded swiss cheese
3 eggs beaten
3/4 cup milk
1 tsp. basil
1/2 tsp celery salt
2 medium tomatoes thinly sliced (optional)
1 tbl. flavored breaded crumbs
1 tbl. parmesan cheese

Directions:

1. Prepare crust - dad cheats and uses store bought
2. Press excess water out of spinach
3. Saute' onions & garlic; add spinach and cook until excess water evaportates
4. Mix all ingredients except tomato, bread crumbs and parmesan cheese
5. Pour into pie shell and arrange tomatoes on top
6. Bake in a hot oven at450 degrees for 15 minutes
7. Lower heat to 350 degrees and cook for 10 minutes
8. Sprinkle bread crumbs and parmesan cheese on pie and bake 10 minutes longer.

Puffed Pancake with Raspberries

Ingredients:

6 eggs
1 cup milk (I used 2% - do not use skim)
¼ cup orange juice
½ cup sugar
1 cup flour
¼ teaspoon salt
½ cup butter (1 stick)
½ pint raspberries
Confectioner’s sugar

Directions:

Preheat oven to 350 degrees.
Mix eggs, milk, orange juice, sugar, flour, and salt in a blender.
Melt butter in a 9-inch round glass pie plate (I used ceramic) in oven until sizzling. Do not allow butter to brown.
Pour batter into baking dish and bake in middle of oven until puffed and brown, about 20 -25 minutes. There is a lot of butter on top of the pancake when it is done so I took paper towel and blotted it to get rid of some of the melted butter.
Fill pancake with raspberries and sprinkle with confectioner’s sugar.
To make raspberry sauce – heat 1 jar of seedless raspberry jam.
